1/2 cup (125 mL) toasted pecans
3 cups (750 mL) vanilla, unsweetened non-dairy milk such as almond, oat or coconut
4 tbsp (20 g) No Yolking™ 100 % Egg White Protein Powder
2 oz (60 mL) freshly brewed espresso
2 tbsp (30 mL) maple syrup or Swerve brown sugar replacement
- Heat 2 1/2 cups (625 mL) milk until steaming; pour over pecans. Cover tightly and steep for 5 minutes.
- Meanwhile, whisk together remaining milk and protein powder until smooth and frothy (a wand frother or blender work really well for this).
- Divide the espresso and salt evenly between two large mugs. Strain steeped milk into mugs. Top with protein milk and foam. Drizzle additional maple syrup (optional) and sprinkle chopped pecans over foam.
