This Raspberry Fool treat only feels like an indulgence. In fact, it’s a simple, and deliciously creamy dessert that will satisfy that sugar craving without any added sugar at all! The No Yolking™ 100 % Egg White Protein Powder whips up to perfection and, when folded in with your favourite fresh or frozen berries and Greek yogourt (or your favourite dairy-free version), the result is heavenly. Have it for breakfast, a midday snack or as an after-dinner treat without the guilt.

Makes: 4 servings

INGREDIENTS:

3/4 cup (175 mL) Monk Fruit sweetener
1/4 cup (60 mL) No Yolking™ 100 % Egg White Protein Powder
3/4 cup (175 mL) water
1 tsp (5 mL) vanilla extract
1 cup (250 mL) fresh or frozen berries
1 cup (250 mL) Greek yogurt (traditional or non-dairy)
Toasted coconut shards or granola 

INSTRUCTIONS:

  1. Place the sweetener and egg white protein powder into the bowl of an electric stand mixer, fitted with the metal whisk attachment. Stir on low speed just to combine.
  2. With the mixer on low, slowly pour in the water and vanilla. Gradually increase the speed to high. Beat for at least 5 minutes or until whites hold a stiff peak (whites should hold their shape and stand up straight – no drooping tips).
  3. Stir half the egg whites with the yogurt until combined. Gently fold in the remaining just until combined. 
  4. Mash the berries to a chunky pulp and add to meringue mixture. Gently fold just until streaky (do not over mix). Spoon into serving glasses or bowls. Cover and refrigerate for up to 1 day or serve immediately. Sprinkle with coconut shards just before serving. 

 

Tip: Swap the berries for ripe mango, nectarines, peaches, kiwi or any combination of your favourite fruit. 

Tip: Make this even more keto-friendly by using a high-fat yogurt or unsweetened freshly whipped cream (not from a can) instead of yogurt.
