You won’t believe how much this tastes just like a slice of the classic spring cake but without the sugar! Our smoothie recipe is made with fresh (and budget-friendly!) carrots, bananas and pineapple and is packed with clean protein, thanks to our No Yolking™ 100 % Egg White Protein Powder. Top it with unsweetened coconut, crunchy granola, blueberries and slices of fresh pineapple and banana for the perfect way to start the day or get an energy boost in the afternoon.

INGREDIENTS:

Smoothie:
2 cups (500 mL) carrot juice
2 cups (500 g) steamed carrots
1 1/2 cups (375 mL) dairy-free unsweetened almond or coconut beverage
1 cup (250 mL) chopped pineapple
1 frozen banana
1/2 cup (125 mL)  No Yolking™ 100 % Egg White Protein Powder
4 tsp (20 mL) EACH orange zest and minced ginger
1 tsp (5 mL) each vanilla extract and ground cinnamon
1/4 tsp (1 mL) ground nutmeg
2 cups (500 mL) ice

Toppings:
1 fresh banana, sliced
1 cup (250 mL) chopped fresh pineapple
1/2 cup (125 mL) blueberries
1/4 cup (60 mL) each granola and unsweetened shredded coconut

INSTRUCTIONS:

  1. Smoothie: Place carrot juice, carrots, milk, pineapple, frozen banana, protein powder, orange zest, ginger, vanilla, cinnamon and nutmeg in high-speed blender with ice.
  2. Mix on low speed for 1 minute and then increase speed to high. Blend for 1 to 2 minutes or until very smooth.
  3. Divide into bowls. Top with sliced fresh banana, pineapple, blueberries, granola and coconut. Serve immediately.
