Makes: 4 to 6 servings

Ingredients:

3 cups (750 mL) prepared tomato sauce
1/4 cup (60 mL) No Yolking™ – 100 % Egg White Protein Powder
4 cups (1 L) baby spinach
1 lb (500 g) Gluten Free pasta such as penne, rotini or spaghetti
Grated pecorino or nutritional yeast
Cold-pressed olive oil
Hot pepper flakes, if desired

Instructions:

  1. Measure out 1 cup (250 mL) tomato sauce and whisk with egg white powder until smooth. Set aside. Heat remaining sauce until bubbling. Stir in spinach until wilted; remove from heat.
  2. Toss bubbling sauce with hot cooked pasta until coated. Stir in reserved tomato sauce with egg white powder. Serve with Pecorino or nutritional yeast and a drizzle of olive oil. Serve with hot pepper flakes, if desired.
