No Yolking™ Spinach Omelet
This fluffy, high protein breakfast is both filling and satisfying. Nutrient packed spinach is ideal for a healthy start to the day. Note that this recipe is for one person, so double the ingredients if you wish to make it for more than just yourself.
Makes: 1 serving
INGREDIENTS:
2 heaping tbsp No Yolking™ egg protein powder
2 tbsp of water to mix egg powder
1 handful of spinach
1 pinch of sea salt & ground pepper
You will also need a non-stick skillet/pan, a plate, a small bowl, a whisk, and a spatula
Optional:
2 tbsp nutritional yeast mixed in with the eggs for cheesy flavour and added B12.
INSTRUCTIONS:
First oil the pan with your choice of butter, coconut oil, or avocado oil. saute spinach in a bit of water for about a minute, allowing the spinach to wilt.
Mix egg protein powder with water, blend until nice and fluffy. (add optional nutritional yeast) Now they are ready for cooking. Pour the mixture over the sauteed spinach in the pan.
Use the spatula to lift the edges of the omelet as it cooks while tilting the pan to ensure the uncooked portion slides under the cooked portion. Continue for about a minute or until the egg mixture is a nice yellow-golden colour.
Fold one half of the omelet onto the other, then place it on a plate and enjoy!
