No Yolking™ Citrus Low Calorie Pudding

We rarely think of cauliflower for desert, but this No Yolking™ low-calorie citrus pudding is a great way to get your veggies and protein too! Don’t forget cauliflower helps remove those “bad” estrogens from your body. These citrus low calorie puddings are great with orange or lemon giving them a fresh zest. They’re great for kids too!

 

Makes: 4 to 6 servings

INGREDIENTS:

  • 3 cups (350 grams) of roughly chopped cauliflower
  • 1 cup unsweetened almond milk or alternative milk
  • 2 tbsp. Mock fruit sweetener for no glycemic effect
  • 2 tbsp. of No Yolking™ egg protein powder
  • 2 tsp. pure vanilla extract
  • zest from 1 large lemon or orange
  • 1/4 cup freshly squeezed lemon juice or orange juice
  • 2 tbsp of chia seeds (optional)
  • 2 tbsp of pumpkin seeds (optional)

INSTRUCTIONS:

Add the cauliflower, milk, vanilla extract, Monck fruit or alternate sweetener, and lemon zest to a medium sized saucepan. Bring to a boil on medium-high heat, then reduce heat to a simmer uncovered for 5-7 minutes until cauliflower is very soft. Let cool slightly. Then add to your food processor, add No Yolking™ egg white powder with the lemon juice. Blend until smooth.

Pour into serving bowls and once at room temperature sprinkle with seeds, cover and refrigerate overnight, for at least 18 hours.
