High Protein Vegetarian Broccoli Salad
This quick, nutritional, and high protein vegetarian broccoli salad is incredibly easy to make and will stay crisp for several days. This delicious salad is protein-rich thanks to No Yolking™ egg white powder.
Makes: 4 to 6 servings
2 heads of Broccoli
½ lge red onion
¼ cup of raisins or 1 cup of grapes
¼ cup unsweetened dried cranberries
¼ cup of sliced almonds
¼ cup cashews
½ cup sesame seeds
½ cup sunflower seeds
½ cup of Avocado Mayonnaise
½ cup of Olive oil
2 tbsp of No Yolking™ egg protein powder
½ Cup of Lakanto or Krisida Monk Fruit sweetener. (all natural, zero calorie, zero glycemic sweetener)
2 tbsp Apple Cider Vinegar
½ squeezed lemon
¼ sea salt
Add the broccoli, onion, raisins, almonds, dried cranberries, seeds and cashews. Mix together until the salad is coated well in the dressing mixture. Chill for 2 hours and let stand for 15 minutes before serving. Stays crunchy for a couple of days.
