No Yolking™ – Chocolate Chia Protein Pudding
You’ll soon see some great new milks like Ripple made from yellow peas. Not only does it taste amazing it has a very low carbon footprint to produce. Still very difficult to find on our shelves here in Canada but if you can find it, give it a try, it’s oh so yummy and added pea protein is great but not a full amino acid profile. Together with No Yolking™ in your recipes you get yourself some green stars for making a nutritional and environmental difference.
INGREDIENTS:
- 2 cups of chocolate almond milk (alternative milks works great too)
- ¾ cup chia seeds
- 4 tbsp. No Yolking™ Egg Protein Powder
- 1 tbsp. cacao
- 1 tbsp monk Fruit sweetener Lakanto or Krisida (can substitute xylitol)
INSTRUCTIONS:
In a blender or a larger jar, (I like a large mason jar for this), place all the dry ingredients, No Yolking™ protein powder, chia seeds, cocao and Lakanto or Krisida monk fruit sweetener (or xylitol) and give it a little shake.
Add 2 cups of Chocolate Almond Milk or use any nut, rice, oat (for some) or Ripple.
Shake vigorously if using the jar method.
Chill for 24 hours or at least overnight
Top with fresh strawberries, blueberries and a sprig of mint.
Makes approx. 3 cups or 4 servings
