Kitchen Tip: Stretch your usual guacamole recipe further by incorporating chickpeas into the mix! In addition to being economical, chickpeas are super nutrient-rich. They contain a number of vitamins and minerals, are a good source of protein and fibre, and have a fairly low glycemic index. Combined with potassium-rich avocadoes (which also contain super heart-healthy fats) and a scoop of satiating No Yolking™ – 100 % Egg White Protein Powder, this will become your new go-to dip!

Makes: 3 cups

INGREDIENTS:
2 avocados, pitted and halved 
1 can (540 mL) chickpeas, rinsed
2 tbsp (30 mL) lemon juice
1/4 cup (60 mL) No Yolking™ – 100 % Egg White Protein Powder
1/3 cup red onion, minced
2 cloves garlic, mashed 
1/2 tsp (2 mL) sea salt 
1/4 cup (60 mL) EACH water and olive or avocado oil

INSTRUCTIONS:

  1. Combine avocados, chickpeas, lemon juice, protein powder, onion, garlic and salt in a food processor. Pulse until well combined and slightly chucky. 
  2. With the motor running, slowly pour the water and oil through the chute. Puree until very smooth. Add more water, 1 tbsp at a time, until desired consistency is achieved. Adjust seasoning to taste.  
  3. Cover well and store in the refrigerator up to 3 days.
