Makes: 3 cups
2 avocados, pitted and halved
1 can (540 mL) chickpeas, rinsed
2 tbsp (30 mL) lemon juice
1/4 cup (60 mL) No Yolking™ – 100 % Egg White Protein Powder
1/3 cup red onion, minced
2 cloves garlic, mashed
1/2 tsp (2 mL) sea salt
1/4 cup (60 mL) EACH water and olive or avocado oil
- Combine avocados, chickpeas, lemon juice, protein powder, onion, garlic and salt in a food processor. Pulse until well combined and slightly chucky.
- With the motor running, slowly pour the water and oil through the chute. Puree until very smooth. Add more water, 1 tbsp at a time, until desired consistency is achieved. Adjust seasoning to taste.
- Cover well and store in the refrigerator up to 3 days.
